Another kind of salad
I am sometimes forced to be "creative" with food because I hate wasting. I have made lasagna with tofu and cilantro in the past, because I had some left over tofu and cilantro that were on its last leg.. and I really really wanted to have some lasagna. Then the "cilantro tofu lasagna" was born. I won't bother with the recipe because it was pretty bad!
Tonight, it's a different story! I made up a salad that's worthy of posting the recipe. It's a bit "weird" I suppose :) but I am known to eat "weird" food. Here it is.. and as you have guessed, one or many of the ingredients were about to expire and that's why they were thrown in together.
Salty egg Greek inspired salad (Serves 1)
1 Salty egg cooked, diced
1/3 English cucumber sliced
1/3 to 1/2 pint of grapes tomatoes halved
3 to 4 tablespoon of yogurt
Instruction is simple: Mix everything together! and Tata! Salty egg salad.
I think 1 salty egg was a bit much, maybe either double the rest of the ingredients or half that egg. The salty egg is playing the part of the feta cheese essentially. Salty egg is something that I only ate with congee. But I really enjoyed the salad that I think now I don't have to wait for congee to eat salty egg :D My dad has made some salty eggs to my request, since I love them so much. I am not really sure how he makes them. Though, I know he's not using the traditional duck eggs, but just regular chicken eggs from the grocery store. I think he just leaves them in a salty brine for weeks and then cooks them after.. not sure.
