Another kind of salad

I am sometimes forced to be "creative" with food because I hate wasting.  I have made lasagna with tofu and cilantro in the past, because I had some left over tofu and cilantro that were on its last leg.. and I really really wanted to have some lasagna.  Then the "cilantro tofu lasagna" was born.  I won't bother with the recipe because it was pretty bad! Tonight, it's a different story! I made up a salad that's worthy of posting the recipe.  It's a bit "weird" I suppose :) but I am known to eat "weird" food.  Here it is.. and as you have guessed, one or many of the ingredients were about to expire and that's why they were thrown in together. Vegetarian Turkish Moussaka

I think to most people, "moussaka" is the Greek version of the lasagna but layered with eggplant and ground beef, potatoes and bechamel sauce.  I was one of those people too, until I visited Turkey.  I remember seeing moussaka on the menu and was sooo excited for it, until the waiter served it in front of me.  I thought.. "Hey, he messed up my order".  But nope, he didn't.  Turkish moussaka is a stir-fry.  It has eggplant in it as well but taste very different from the Greek moussaka.  Tonight I tried my own version of the vegetarian one,  replacing ground beef with tofu.  The taste of meat does add that little something to the dish, so I honestly have to say the vegetarian one is not as good.. but it's pretty good! Oh you yummy Paneer & Tikka Masala

Last week, I had cooked paneer for the first time!! Paneer is an Indian cheese.  Same kind of cheese as cottage cheese but made in block like firm tofu.  The texture when I was preparing it seems like extra firm tofu, but I find the texture when you eat it to be quite different.  It squishes like when you're eating cheese curd.  If I had to choose, I much prefer paneer over tofu.. Sorry tofu! I had made paneer by simmering it in a jar of tikka masala, pre-made Indian sauce from "Kitchens of India".  I threw in some chinese eggplant, because I'm in love with that vegetable.  It was good, I think... I had a cold that night so couldn't really taste the flavours, but my friend who was over for dinner quite enjoyed it.  She even packed some left overs for lunch the next day, so I assume she didn't just say it was good to be polite.   Although I had the cold, the tikka masala didn't taste like the VH tikka masala I've had.  Actually the...

Unlimited Yoga

So I bought one of those groupons for an unlimited monthly pass at a local yoga studio.  Tonight was my second time, and the teacher was quite knowledgeable.  It was a beginner course and I actually felt like I worked out (as much of a work out for a non heated yoga class).  I'd like to go at least 5 times a week if I can.  I started Tuesday and fully intended to go yesterday but when I got there I couldn't find parking and figured I wouldn't be able to get to class in time if I parked too far anyways.  Was a bit annoyed with the slow drivers I had on my way there.. Funny how I wanted to go to yoga to de-stress, but ending up building more stress and didn't even get to go to class!
